Cookie Recipe

1/2 cup white sugar

1/2 cup brown sugar

1 egg

75-100g of butter

100g of chocolate chips (a pack of nestle/cadbury ones, half a pack of Pams ones)

1 1/4 cups of flour (Edmonds Gluten Free works if required)

1/2 teaspoon of baking soda

 

Heat the butter in a microwave for 30-40 seconds

Mix the sugars in a bowl

Add the egg and the butter

Mix

Add the chocolate chips

Mix

Sift the flour and baking soda into the rest of the mixture

Mix until consistently combined

 

If using gluten free flour, pop in the fridge for 30+ minutes to make it easier to work with. If using standard flour, continue

Pre-heat oven to 180 degrees Celsius

Roll cookie mixture into balls. I do them about 2cm in diameter, but you do you. If I'm using the moustache tray, one moustache takes 3-4 of these balls.

Space cookie dough balls out on a tray

- Note, gluten free cookies will spread more than cookies made with standard flour, factor this in to your spacing

Place the cookies in the oven for 6-10 minutes, removing them when they are golden brown (or cooked to your liking)

Transfer to a cooling rack after a minute or 2 (once cookies harden enough to hold their shape on the rack)
